Apple and Jicama Slaw

Warmer weather is finally here to stay.  At least for a bit, there’s no snow in the immediate forecast and I’m loving it.  I admit that while Fall is my favorite season, I love summer in Fort Collins.

The sky is a ridiculous color of blue, everything is green and in bloom, and all the grilling!  Plus patio drinks, tank tops, and hikes with friends.  Summer is so much fun!

With the warmer weather, I’ve been craving cool foods that are refreshing and crisp.  I recently saw some jicama sticks at Trader Joe’s and paired those up with some apple slices to make a light summery slaw.  Perfect as a snack or a side dish.

Andie’s Apple and Jicama Slaw

  • 8oz, Jicama Sticks, thinly sliced.
  • 1 Medium Sized Sweet Apple, thinly sliced. I used a Pink Lady but you can use what you enjoy
  • Juice of 1 Lime
  • 1TBSP Chopped Cilantro

The jicama sticks should be sliced thin and then thinly slice the apple.  You want them to be about the same size.  Toss with lime juice and cilantro.  Serve immediately or chill for about an hour first.

This is super quick to put together and lasts a few days in the fridge thanks to the lime juice.  You can make this batch even bigger if you’re hosting or going to a get-together. Or just because it’s delicious and you want to face plant into a whole bowl of it.

With the crisp sweet apple and crunchy jicama, this is a great little dish to have during warm weather.
